Objective of course:
Students know the basics of organic plant, domestic animal and food production. They are able to study the local and organic food chain from the viewpoint of sustainable development. Students know the regulations concerning organic food and recognise quality factors of local and organic food. They have an overview of global organic markets and future development challenges of the organic food sector.

- local and global organic food markets
- local and organic food in professional kitchens
- organic food from the consumers' point of view and in media
